Koshary is the most popular Egyptian cuisine rich in calories and nutritional values
this Egyptian dish comprising of rice, vermicelli, pasta, lentils, chickpeas and fried onions topped with a tomato-garlic-vinegar sauce.
Ingredients:
The beauty in this dish that all the ingredients are cooked before
1 cup White Rice
1 cup pasta
1 cup brown lentils
1 cup chickpeas (boiled)
3 large Onion (sliced)
Dukkah sauce (very basic)
heat the oil and fry in the crushed garlic, cumin, chilli or cayenne and coriander powder then add 3 tablespoons of vinegar
Fried onions
deep-fry the onions over medium-high heat until slightly brown.This step took me about 15 to 20 minutes
Tomato sauce
1/4 cup of olive oil
1cup of fresh tomatoes
4 tablespoons of tomato paste
4-7 cloves of garlic, sliced
1.5 teaspoons of chili powder
5 tablespoons of vinegar
5-6 cups of water, depending on your preferred sauce thickness
Salt and pepper, to taste
In a skillet, fry crushed garlic in 2 tbsp of oil, cumin and coriander powder for about 1 min. Add this straight away to the tomato sauce and stir.and add the remaining ingredients,
And leave it to become thick
And finally the dish is became ready for submission
On the platter, place some rice and pasta. Add some black lentil and chickpea on top. Pour over the tomato gravy and garnish with the browned onion slices. Serve hot.
